VEGAN/GF/HIGHPROTEIN 15 MIN MAC N' CHEEZ

Hello again all you beautiful souls!

It has been a busy time for me this week and I'm excited to share with you a creation that has been born from said business. I was presented with a pleasant, surprise opportunity this week by my brother Jesse ( who is a fire spinning performer) who needed a fire safety to watch him perform and make sure he knew if he caught on fire! It's amazing! haha! I had to work earlier that day so when I came home I didn't have much time to make dinner before I had to rush out the door. This, my friends is when the super easy, amazing, creamy, dreamy, mac n' cheez was born! I bought the ingredients at my place of employment ( I work as a nutrition specialist at a health food store) and thought " Hey! this might work! " and oh boy, did it ever.

This recipe has very few ingredients and only takes about 15 minuets from stove to table! which is awesome for when you don't have a lot of time but still want something warm and comforting to soothe your busy soul. Bean pastas are fantastic for those who are looking for a "no brainer" way to get more protein into their diet. This recipe is a MUCH healthier alternative to any box mac n' cheese that has dairy and other ingredients which are less than optimal for our health. Also, all the ingredients are very easy to find at almost any grocery store you can think of, which makes this recipe a feasable option to any of you who would like to try it.

Okay! On to the recipe!

Ingredients

1 Can full fat coconut milk

1 Can butternut squash

1 Tbsp. Apple cider vinegar

2 tsp. Non-GMO cornstarch ( this ingredient can be optional, but makes the sauce a little thicker which I think adds to the richness.)

1 tsp. salt

1 Clove garlic ( or 1 tsp garlic powder)

1 box bean pasta ( I used the Banza brand of chickpea pasta, but you can use whatever pasta you like of course. I like the bean pasta for the extra protein)

Instructions

1. Start the water for your pasta first, so that while your pasta is cooking, you can make the sauce.

2. While your water is coming to a boil you can put all the ingredients for the sauce into a blender, food processor, or in my case, a Nutribullet and blend them until they become a homogeneous mixture of cheezy deliciousness.

3. add a dash of salt to your boiling water and then add in your preferred pasta of choice.

4. drain pasta and put it back into the pot along with your golden sauce of amazing-ness and simmer on medium until thick, rich, and creamy. At this point you can also add some greens if you like! I added some kale for extra nutrients and color.

5. ENJOY!
