WHAT DOES A VEGAN EAT ON EASTER? ( BEST EVER BLACK BEAN BURGER RECIPE) EASY/VEGAN/GF/WF

Hello again all you beautiful souls!
Easter is only a few days away so I thought I would share with all of you what I have decided to bring to my families house for a cruelty free, healthy and DELICIOUS Easter dinner!
I was on the phone with my mom a couple days ago, who has decided to join the plant based movement! (which I am so happy about BTW) and we were brainstorming different things that I could make for Easter dinner this Sunday. There's always the veggie roast, or mashed potatoes, shepherds pie, lentil loaf etc.. but honestly I don't feel like making ANOTHER loaf until thanksgiving at the earliest. That's when she had the brilliant idea ( partly due to the fact that her boyfriend loves a good burger) to make burgers! which I just so happen to have an AMAZING recipe for that I came up with all my own (toot toot!) These are not just any ordinary burger mind you. These are smokey and moist black bean burgers, with cilantro, trumpet mushrooms, smoked paprika, corn, peppers.. ALL THE GOOD STUFF! My mouth is watering just thinking about them!
I've decided to pair them with all the delicious burger toppings ( tomato, lettuce, onion, avocado), sweet potato wedges and my favorite pickle in existence, Guerillos Dill Pickles! These pickles are seriously AMAZING.
All of the ingredients used are very easy to find at your local grocery store and are packed full of nutrients and flavor! Forget that greasy beef burger! black beans are not only just as high in protein as beef, but unlike beef are also full of fiber, low in fat, and high in antioxidants that fight against aging! I am definatley down for a burger that is delicious and also amazing for my health!
Ingredients
2 lbs. Canned black beans
1/2 a medium Red onion finley chopped
8oz. frozen Organic & non-GMO corn
1 Bunch Cilantro finely chopped (should give you roughly a cup)
1 Red Pepper finley chopped
8oz. Trumpet OR Baby Bella mushrooms finely chopped
1 1/2 Tbsp Smoked Paprika
2 tsp. Cumin
2 tsp. Salt
1 tsp. Black Pepper
3/4 Cup blended rolled oats (for holding everything together)
Directions
Preheat your oven to 375 F.
1. First you want to heat a non stick pan on medium heat and adding the finely chopped mushrooms and a little pinch of salt to help them release any water. Cook them until they have released all their moisture and start to turn a little brown. you can add a small amount of oil to the pan or water to help them cook.
2. Start the rest of the process by draining and risning beans and putting them in a large mixing bowl.
3. Add corn, finley chopped cilantro, red onion and bell pepper to the bowl.
4. Once the mushrooms are fully cooked add them to the bowl, along with all the spices.
5. Time to get messy! mix all the ingredients into one homogenous mixture by squishing them in your hands to get everything fully mixed and so the beans are nice and smooshed. Wear gloves if you don't want anything to get on your hands, or wash your hands and get to smooshing!
6. Form the mixture into patties and plaxce on parchment paper to bake.
7. Bake for 35-40 min, cool and enjoy!
